With much thanks to Cooking Illustrated, my wife found this recipe and declared it ‘to die for’. Lucky for me, because it truly was delicious! Thanks, wife! By the way, the base for this delicious dish is sofrito!
WHAT IS SOFRITO, you might ask? It serves as the fundamental flavor base for many Cuban dishes, including this one. The combination of onion, green pepper, and garlic (and often cumin and oregano) is a close relative of the French mirepoix, which features onion, carrot, and celery.
- 1 cup dried black beans , rinsed and picked over
- 2 cups low-sodium chicken broth
- 2 cups water
- 2 large green bell peppers , halved and seeded
- 1 large onion , halved at equator and peeled, root end left intact
- 1 head garlic , 5 medium cloves removed and minced or pressed through garlic press (about 5 teaspoons), remaining head halved at equator with skin left intact
- 2 bay leaves
- 1.5 cups long grain white rice
- 2 tablespoons olive oil
- 6 ounces lean salt pork , cut into 1/4-inch dice
- 1 tablespoon minced fresh oregano leaves
- 4 teaspoons ground cumin
- 2 tablespoons red wine vinegar
- 2 medium scallions , sliced thin
- 1 lime , cut into 8 wedges

I would not say we watch a ‘lot’ of television, but we do enjoy certain channels: the food network, the cooking channel, SYFY, USA… and of course, the History Channel! One day a few weeks back the History Channel had a documentary on the Vikings. They were visiting a re-enactment where the people were showing ‘how the vikings did it’. What really caught my eye was the cooking. When I saw how they quickly prepared a pork loin, I looked at Sarah and said “hey, I can do that!”… and I did it!

- 1 Pork Loin
- 1 bottle of Mead
- 2 cups of honey
- 4 cups of assorted nuts
- olive oil

I was sick last week: real sick. When it was all over the first thing I wanted was something light on the stomach that would begin to replenish the ol’body. I am not a huge fan of chicken noodle soup (don’t hate it, but don’t love it), but I DO love my eggdrop soup! Just a few ingredients, easy on the tummy, delicious in the mouth (because I had not eaten in almost two days), and good for the body. Never have you had such a delicious and simple soup…

But let me go ahead and say “NO, you don’t have to be sick to eat this!”. You knew that, right? In our house we often times just crave it, so we make it. The soup takes about an hour to make OR it can take as little as 10 minutes… depends on if you want to rush it or have it a bit more savory.
- 4 cans (14 oz. each) of chicken stock/broth (I use Swanson 100% natural, no msg)
- 1 cup of water
- 1/2 tablespoon of sesame oil
- Soy sauce (to taste!)
- 1 tablespoon of chopped ginger OR…
- 2 tsp of chinese ginger powder
- 1 cup of chopped green onions (I grow my own, but they are the thin, small size. You can easily use the larger ones)
- 3 eggs and 1 egg white

Want something with a little punch that is super healthy, low in salt, and lots of flavor? I tried this recipe and found just what you were looking for. Best part about this is you can skip the wrap if you are gluten intolerant and just eat it plain, over a bed of lettuce, or whatever you like.
Now to warn you ahead of time, I saw this woman making this on TV in about 3 minutes time (that is tv show time for 30 minutes prep and cook for us normal people). She used no measurements, but just threw stuff in a pan! Ugh! But I believe I have successfully recreated this and even have a few suggestions from my mistakes… so here we go:
- 2 Salmon fillets
- Oil (I used vegetable)
- 1/2 teaspoon of mustard seeds
- 1 cup of diced white onions
- 1 small piece of ginger (I used one about the size of my thumb… if you need my thumb, just call)
- 1 large garlic clove, chopped up
- Curry leaves (I used actual curry powder, about 1 tsp)
- 1 tsp turmeric
- 2 tsp coriander powder
- 1 large tomato, diced
- 1/2 chili powder
- 1 large handful of coconut (or more, to your taste)
- 1/2 cup of water
- 1/2 lemon
- Peanuts (I used the ones roasted without salt)
- Shredded romaine lettuce
- Large flour tortillas
